Catering for up to 170 guests our brief for the kitchen was to include extraction and associated plant, walk in refrigeration with remote condensers, warewashing, glasswashing, fabrication and cellar cooling. Abraxas developed the design from scratch working alongside Ensarb’s own estate manager and Jenkinsons catering team to ensure the right equipment was specified.
Being a new build Abraxas worked alongside the main contractor to develop, specify and design the external services such as the outfalls and intakes for the kitchen ventilation, pipe runs and positioning of the refrigeration condensers so as to be sympathetic to the oak timber clad building.
Inside the kitchen Abraxas designed in a cookline with 1 no 20 x grid combination oven, 1 no 10 x grid comibintion oven, 2 no gas ranges, heated servery pass with retractable heat lamps, undercounter refrigeration, prep tabling, sinks, a walk in coldroom, a pass through hood type dishwasher for crockery washing and a hood type dishwasher adjusted to suit glass washing all with associated tabling.
Abraxas’s own team of engineers installed the kitchen over a period of ten days, installing all gas services, interlock, ventilation, plant, ductwork, coldroom, refrigeration plant, cellar cooling, plumbing and equipment. All works were completed on time and to budget.
The Mill Barns is a stunning venue which Abraxas are proud to have been involved in.
